Sweet and Sour Chicken

3 pounds boneless, skinless chicken breasts
Beaten egg
Cornstarch

Sauce:
1 ½ cups sugar
1 cup cider vinegar
½ cup ketchup
½ cup chicken broth
2 Tbsp. Soy sauce

Dip chicken in beaten egg, then cornstarch. Brown in a pan with hot oil. Cool and place in a freezer bag.

Combine sauce ingredients and bring to a boil. Cool and place in a plastic bag. Seal label and freeze flat.

Sweet and Sour Chicken Serving Day Instructions:
Thaw completely. Preheat oven to 350. Place chicken breasts in a 9x13 pan. Cover with sauce. Bake uncovered for 45-60 minutes. Serve over rice.

Bacon Wrapped Chicken

Ingredients:
6 large boneless skinless chicken breast halves
8 oz carton whipped cream cheese with onion and chives
1 tablespoons butter
salt to taste
6 bacon strips

Assembly Instructions:
Flatten chicken to ½ inch thickness. Spread 3 tablespoons cream cheese over each. (Note that you should use all the cream cheese for each recipe.) Dot with butter and sprinkle with salt; roll up. Wrap each with a bacon strip. Place, seam side down, on a greased pan. Flash freeze. Place frozen chicken breasts in a freezer bag. Seal, Label, Freeze.

Bacon Wrapped Chicken Serving Instructions:
Thaw. Place chicken in a greased baking pan. Bake, uncovered, at 400 for 35-40 minutes or until juices run clear. Broil 6 inches from the heat for 5 minutes or until bacon is crisp.

Supper swap recipe November 2008

The ingredients listed are per family:
1 30-oz. Jar spaghetti sauce
1 tsp. Garlic salt
1 1/2 pounds boneless skinless chicken breasts sliced lengthwise into 1 inch strips
1 package (8 oz.) uncooked manicotti shells
2 c. shredded mozzarella cheese

Assembly:
Slice the chicken breasts while still partially frozen. Sprinkle the garlic salt on the sliced chicken breasts.

Stuff the chicken into the shells, place in a freezer bag. Pour the
sauce over the stuffed shells, then rinse the jar with a few ounces of water and pour the rinse water in the bag (this provides a bit more water to adequately cook the noodles). Seal the bag.

Place the cheese in a separate bag, bundle with the shells, and freeze flat.

Chicken Manicotti Serving Day Instructions:
Completely defrost the manicotti in the fridge for several days. Pour into a 9x13 baking dish and top with the shredded cheese. Cover the dish with aluminum foil. Bake at 350 for 1 hour.

Serving suggestions: garlic bread, cheese bread, bread sticks, garden salad, or fresh veggies. Enjoy!!

French Toast Sticks & Sausage
Supper Swap recipe ~ October 2008

12 pieces Texas toast bread
1/3 cup melted butter
6 eggs
1/2 cup sugar
1/2 tsp. cinnamon
1 cup orange juice (ready to drink, not concentrate)
1 package Little Sizzlers sausage links

Using a pizza cutter, cut each slice of bread into thirds lengthwise to make “sticks”. In a bowl, mix butter, eggs, sugar, cinnamon and orange juice. Dip bread sticks into mix. Place on a greased cookie sheet. Pour any remaining dip over the French toast sticks. Bake 25 minutes at 350 degrees on middle rack. Turn once half way through baking time. Let cool.

Freeze on cookie sheet until firm. Place 36 sticks in gallon freezer bag. Seal, label and freeze.

On swap day, also bring a package of 12 Little Sizzlers uncooked sausage links (get them on sale!) for each family.

To serve: Place 3 French toast sticks on microwave-safe plate and heat on high for 1 minute until warm. Or put frozen sticks in the toaster to warm. Serve with syrup.

Hot Ham and Cheese Sandwiches said...

Hot Ham and Cheese Sandwiches

6 Hoagie size buns (like a 6” Subway style roll - Aldi sells these for a great price)
1 pound sliced ham
1/2 pound cheddar or swiss cheese slices

Mix the following in a small bowl:
1/3 cup softened butter
4 tsp mustard
2 tsp dried minced onion
2 tsp poppy seeds
2 tsp sugar

Spread the above mixture on the insides of the bun. Top each roll/bun with 2 slices ham and 1 slice of cheese. Replace roll tops. Put sandwiches into freezer bags No need to double-bag. Each person will get 6 sandwiches.

Hot Ham & Cheese Sandwiches Serving Day Instructions:
Partially thaw. Open sandwich. Place on baking sheet. Bake for 10-15 minutes at 350 degrees or until cheese melts and heated through.

Pizza Dunkers

Ingredients:
1 loaf frozen bread dough
8 oz pkg Pepperoni, chopped in food processor
5 oz pkg Canadian bacon, chopped in food processor
2 cups grated part-skim mozzarella cheese
1/2 tsp Italian herb seasoning, or to taste
2 cups Pizza Sauce

Directions:
1.Thaw or prepare dough. Roll into a 14×24 inch rectangle about 1/4 inch thick.
3. Stir pepperoni, Canadian bacon, cheese, onions, herbs together in bowl.
4. Spread mixture onto dough rectangle, pressing a bit to secure meat.
5. Like a jellyroll, roll dough beginning at the long side.
6. Use plain dental floss to cut roll into approximately 24 - 1 inch slices.
5. Lay slices on greased cookie sheets or parchment paper and flash freeze.
6. Place 24 frozen dunkers in gallon freezer bag, separating layers with waxed paper or parchment paper.
7. Fill quart bags with 2 cups sauce and include in each bag (or include a can of pizza sauce on swap day).

Pizza Dunkers Serving Instructions:
Place frozen dunkers on baking stone with sides (or cookie sheet) about an inch apart. Before baking, let sit in a warm location for 10 minutes or more. Bake at 400 for 15 minutes or until golden brown. Serve with warm pasta sauce.
