RATINGS:

We like to track how members like the recipes. Be sure to rate the meals by sending an email to Deanne.

Use a scale of 1-5:
5 – Awesome. We love it!
4 – Very Good
3 – Okay/Neutral/Indifferent
2 – Didn’t care for it much/Not a hit with our family
1 – This does not work for our family. We do not want it again.

Note that if you do not rate meals, then a rating of “3” will be assigned for you. Ratings that meals receive determine whether the meal is swapped again in the future. Please rate the meals!

You may post your ratings here or email Deanne.

potato stuffed meatloaf gets a 5 from the Marley's. Max's first bite was "yum...mmmm....this is good".

Anonymous said...

Potato Stuffed Meatloaf gets a 4 (averaged out from our family points) I loved it! Tim gave it a 3 bc of the sauce, but that is just his tastebuds that don't like too much flavor. From Marlo Z

Amy said...

We are rating a 3 for the Hobos. The kids didn't like it so that puts it lower for sure.

The Witness said...

Hi Marlo. I saw your comment about Tim not caring for the sauce on the Stuffed Meatloaf. Some people prefer this sauce instead:

¾ cup ketchup
¼ cup brown sugar
1 ½ tsp dry mustard

It's worth a try if next time you'd like to use that sauce for him :)

Anonymous said...

3 for the Hobos- Zosel

Anonymous said...

4.6 for the tater tot hot dish from the Marley's. Yummy. I had leftovers for lunch.

Anonymous said...

Baked Chicken Dijon got a solid 4 from the Zosel's. Didn't make the dijon mayo sauce and liked it very much!

Anonymous said...

Just a complete aside here, Max and Kyla both said that the tater tot hot dish was their favorite swap dish so far.

Amy said...

Catalina chicken gets a 4.5 from the Whillocks.

Anonymous said...

Hi... I sent these to Deanne already but thought I would post here as well.

Cranberry Chicken was 4.5 ( would have been a 5, but jeff likes mushroomy sauce and not sweet but he liked it!!)

Catalina Chicken got a 4.0 from us. Lots of rice left over.. it was yum!!

Hobo Packet 4.0 ( mom & dad loved it but the veggies got a lower rating from the kids but they did enhoy it!!)

Chicken Manicotti 4.0 ( on the second cooking experience..hehehe)

next up.... Pizza Burgers tonight.

sarah s. said...

the french toast sticks got a 4.5 from us. Only because as my husband says there wasn't anything special about them but still good and something we'd definitely eat again. From a cooking standpoint, I really liked that they weren't just frozen in a box and the kind that don't seem like real bread...they were actually homemade! And I know Jesse put lots of love into them, so it made it a 5 for me :-)

Amy said...

Whillocks rate a 5 for the Swiss & Chicken Casserole. We also rate 5++ for the Beef Stroganoff. It has been the favorite so far!

Anonymous said...

Surprise, surprise...the Marley's rate the chili a 5!!! This is the first chili that Max actually liked.

Amy said...

Pronto chili got a 4 from us. The "smoky" flavor to it (not sure what ingredient that was) made us put it at a 4 rather than a 5. We still liked it though and would eat it again.

Anonymous said...

Tator Tot Hotdish got 3.5
LL Beef Burgers got 4.0 from the Zosel's

sarah s. said...

the Pronto Chili gets a 4 from us, Brian didn't care for the smoky flavor either but said with enough cheese and sour cream you can mask it-would definitely eat it again though!

The stroganoff was not a hit with our family. Brian liked the flavor, I was hoping for a more beefy flavor. The biggest part for us was the meat, we like bigger chunks with more sauce and this seemed to be all meet with a little sauce. I'd rate it at about a 2.5 because the basic recipe is something I could doctor up on my own if I were to make it. Maybe it wasn't as big of a hit with me because Brian made it for me as part of my birthday meal and I picked it out since the recipe looked really good and I had great expectations.

Anonymous said...

Zosel's give the beef stroganof a 4.0- The taste was awesome, but the texture was... eeh. The kids gobbled it up super fast and asked for seconds, which is rare at any supper we eat. Would eat again, but maybe with a different meat.

Chicken Manicotti got a 3.5. Would eat again definitely! (Tim will always rate red sauce and ketchuppy stuff lower because he doesn't prefer those things. He eats them without complaint though because I am the one that cooks : ) )

Anonymous said...

Thanks for rating the meals. The rating for each meal is posted on the home page of the blog on the right-hand side. I update these after the majority of the group has rated each meal.

Anonymous said...

Update from the Bethke household!!

The Pizza Burgers were a 5!!! Hands down they were great!

The 15 min. beef stroganoff was the first out of the bag... We gave it a 4.5... We loved it...(again) But we had some cooked ground beef from our fridge to it to give it some more "meat" ( I have 3 growing boys... ) and we all moved it!! Just like last time... I think the ground beef added better texture to it!!

Next up was the pronto chili - this got a 3.5 from our house..from the first round... I think for us it was too sweet?? smokey?? so we doctored it up just a little bit, the second time around which had the troops gobbling it up.

Then we went for the chicken manicotti.. ok lets just say that when baked by mom it was done RIGHT the first time....hehehe. It got a 4.5 from all of us this time around!! YEAH!!

The french toast sticks got a 5 from this family again!! No I am not bias cuz I made them....:) I have to say- having tried all the processed and frozen ones on the market, these are nothing "special" like Sarah said but they are easy to whip up each morning at 6 a.m, they are "healthier"( *smile*) and pretty easy to make.. enought that I made our family 5 extra batches...which will be done very soon!! We love them and the fact they are made with OJ!!
Next up *****Little League Beef Burgers and Potato Stuffed Meatloaf.... Stay tuned:)

Anonymous said...

5+++++Awesome, we loved it!! This is the comment for the Marley's for the baked chicken dijon. I must say, I think this is one of my favorite swap dishes. I absolutely LOVE this chicken in a garden salad. It puts the McDonalds premium salad to shame, absolute shame! Kyla told me I need to make it on my own, and not wait for the swap to make it. YUMMY!!!

Anonymous said...

Ok, The Little League Burgers are getting a 5 from the Bethke Family!! Yum-o and easy!! Even my child that is not a ground beef fan, except tacos.... liked them!! YEAH!!

I think our family is going to try Chicken Dijon... We have not tried it from the first time.. but I think the Marleys have noe peaked our interest!! Chicken Dijon here we come.

Anonymous said...

Well, the chicken manicotti gets a 5 from the Marley's. I know, you are all shocked that we actually rated a meal with a 5. I could probably knock you all over with a feather right now. Really, we loved the manicotti. My sis-in-law had dinner with us tonight, and she also gave it a 5. YUMMY!!!

Amy said...

It's been awhile so here is my list from recent meals:

Potato Stuffed Meatloaf- 4

Chicken Dijon- 5-- we loved it with and without the dijon sauce; plus our family is small so we got 2 full meals plus leftovers out of this.

Little League Burgers- 5

Anonymous said...

Here is my mixed review of the beef stroganoff: The Marley's rate it with a 3*. We have had this recipe in the past when it was made with roast beef, and I think we probably rated it a 5. However, with the cube steak, 3 of us didn't care for it, and the other 3 ate it. I would love to keep this recipe in the swap, but I would prefer it with roast beef. If we do do this one again with cube steak, then I would see if someone would do a side swap with me.

Anonymous said...

Swiss and chicken casserole gets a 4.6 from the Marley's. This is only because Kyla was completely indifferent on the meal. She ate it, but it wasn't her favorite. We would love to see this one again in the swap. I did add about a cup of pureed zucchini and about a 1/4 cup of pureed sweet taters, and 8 oz. of sliced mushrooms. I really don't think it affected the taste too much. We only had about a cup of leftovers. We also rate the french toast sticks with a 5. We haven't eaten the burgers yet, because I was in a pinch and I had to use the buns last week for garlic bread. So, we'll rate those soon, after I head to the store for more buns!!

Anonymous said...

This post didnt make it the first time... so here goes...

The First Round of Chicken Dijon got a 4.5 from the fam.

The potato stuffed meatloaf got a 4.0 from my fam. I think it would have gotten a 5, if I would have cooked the potatos just a tad longer.. I was anxious to eat it :P

Anonymous said...

Little league beef burgers get a 5 from the Marley's. Those are such a great thing to have in the freezer for an extremely last minute meal.

Anonymous said...

Morrells likes the chicken cassorole from Jessica Bethke. My Aunt and Mom liked it too.

Anonymous said...

Ok, I went a supper swap kick...

The Swiss & Chicken got a 4 from my family.. I would have hope to get a higher rating but the dish I baked this in dried the meal out a little bit, bummer.. but the flavor was really good. (especially since my family is not a fan of swiss).

Italian Hot Beefs gets a 5 from our family!!! YUMMMM-O We wanted more. :)

Freezer Beef Chimichangas gets a 5.0+ from this family... EASY to prepare. and soooo good!! Simple flavors.. not anything crazy.. the kids gobbled it down!!

Chicken HotDish- gets 5.0 from our family. This was very good!!

Dana's Pork Chops gets a 5.0 as well from this family!! These were delicious and tender... we gobbled this down as well!!

Thank you for an awesome round of meals!!

Up next for the Bethke Family is chicken stuffed cutlets. Can't wait.

Amy said...

Mardy's Meatballs were a hit. Definite 5. We had to really figure out who got the leftovers.

French Toast Sticks were awesome too! Also a 5. Loved them! I will probably make them myself too just to have them in the freezer.

Anonymous said...

I'm going to rate the stuffed chicken cutlets with a 5. I thought they were awesome, and everyone ate them except Kyla and Oliver. Oliver just never eats, so that wasn't too unexpected. But I think Kyla was just in a bad mood, so I'm going to leave her rating out of the average. I know Amy said they were high maintenance to prepare, but I loved the fact that these were individually wrapped. I know that I have seen thinly sliced turkey or chicken breast at WalMart, and I would bet that a person could get thinly sliced chicken breast at a meat market, which would save a person from having to pound the breast flat. I would love to see this one in the swap again!

sarah s. said...

Swiss & Chicken is a 4 from my hubby (I wouldn't eat it so saved it for when I was gone...I won't eat mayo or miracle whip) I probably would not eat this one myself.

Little League Beef Burgers is at least a 4 from hubby again (again, I saved this for when I would be gone) he said he'd probably add BBQ sauce, but ate all the leftovers without it.

Chicken Hotdish 3.5. Matthew didn't eat much but I think he's getting tired of chicken in general since we eat a lot of it.

Beef Chimi's get a 5. We had enough to have them two separate nights plus lunch for Brian. I made them two different ways and liked the first time better even though I almost burnt them :-)

Chicken Pot Pie is a 2.5. We don't care for lima beans and the boys didn't care to eat much of it.

So far we've been happy I joined supper swap, the downside I've found recently with the pot pie and Chicken hotdish especially is that the amount is so large for our family that we end up having to throw it. Some things I've been able to refreeze for another time but the pot pie I couldn't because of the crust. The Chimi's I refroze and they worked great a second time around.

Anonymous said...

Italian hot beef sandwiches get a 5 from the Marley's. Kyla even said that it was better than the Best Roast beef everrrr!!

Anonymous said...

Chicken casserole gets a 5 from the Marley's.

sarah s. said...

Italian Hot Beef sandwiches = 5+ (we LOVED this one, thankfully it's easy to make!!!)
Mardy's Meatballs = 4, we thought they were a bit sweet even after I added a jar of pizza sauce to it, but still good when I served them over egg noodles.

Anonymous said...

Chicken pot pie gets a 5 from the Marley's. Max said he would rate it higher if he could.

Anonymous said...

Freezer meatballs get a 4.6 from the Marley's. This is because Kyla was indifferent, but I should factor in the fact that Oliver actually ate one whole Oliver-sized bite and didn't spit it out. We have leftovers, which means I will get a good lunch today!!

Amy said...

Ham & Cheese Casserole gets a 4.5 from the Whillocks. I think I would skip the breadcrumbs on top next time. I didn't think they added that much to the meal.

Anonymous said...

Dana's porkchops gets a 4.6 from the Marley's.

Anonymous said...

Pizza dunkers get a 5 from the Marley's.

Anonymous said...

I forgot to comment on the pizza dunkers. I had a heck of a time getting the thawed dunkers out of the bag, even after I cut the bag open. I would recommend taking the dunkers out of the bag while they are still frozen, place them on the baking sheet, and then defrost them. I also could have been having a bad day with cooking, too, so if you have another method that works here, please let me know!

Ok, ringing in the new year with some new ratings!! Marty's Meatballs got a 5 from our family!! We love that there was leftovers and we would use them in different ways... The stuffed chicken cutlets get a 4 from our family. The Yummy Pesto Butter Stuffed Chicken Breasts were a 4.5 from our family!! They were YUM-O!! The buttermilk Pancakes get a 4.5 from the Bethkes.... we loved loved loved the Cinnamon Cream Syrup.. its was fabulous!!!

Please note the comment from Kari about the pizza dunkers is correct. Thes best way is to remove them from the bag freezer bag to thaw on a plate of some short of a cookie sheet in your fridge and then let "rise" for 10 mins in warm spot before baking. Bread dough is somewhat sticky when it is thawed.. --Thanks Kari!

Next up... Angel Hair Pasta with Italian Chicken.. Stay Tuned!!

Happy 2009 Ladies!!

Freezer beef chimichangas get a 5 from the Marley's. I have to admit, I was a bit skeptical about my family liking this one, but it was a hit. I did add some pumpkin and flaxseed meal to the meat, and it turned out great!! Oliver even had a few bites of this one, so I know it had to be good. Elsie called these "pinatas".

Amy said...

Hi All-
Here are our recent ratings:

Pizza Dunkers- 5 We all really liked these. They would have been better if I hadn't burned them (oops!). I definitley recommended spraying the pan before baking also.

Pancakes & Cinnamon Syrup- 4.75 These all tasted great! The only reason for not rating a 5 is we all really prefer fresh pancakes to frozen ones. So I would probably make the syrup and freeze to use later but make the cakes myself on the day of use.

Italian Chicken with pasta- 5 We all really liked this also. It was great to have something different to eat with noodles, other than regular marinara type sauces.

Anonymous said...

Oops, I forgot to do the Mardy's meatball rating, but we gave it a super duper 5+!! Loved it!! We also had the ritz chicken the other night, and we were like a pack of rabid wolves attacking the meal. That one got a huge 5+ from the Marley's.
-Kari

Italian chicken with angel hair pasta gets a 5 from the Marley's! Yum-O!

sarah s. said...

Pancakes with syrup-5. I love that we could take out however many pancakes we wanted and microwave them. The syrup was a delicious substitute to normal maple.

Italian Chicken with Angel Hair Pasta- 3.5, We all liked it the first time around but I struggled with the smell and couldn't eat any of the leftovers (could be a pregnancy thing but I don't like salad dressings so I think it was a combination)

Freezer meatballs- 4.5 I made them with a swedish meatball type sauce and served over noodles. We ate it all up and I liked that they could be used a variety of ways.

Ritz chicken- 3.5 Brian didn't care for the ritz on top and I thought the texture of the meat was a little weird since the chicken fell apart after cooking it in the crock pot, otherwise the taste was fine.

Pizza dunkers- 4 Brian thought they were a little spicy. I too struggled with getting them out of the bag once thawed and since I didn't make them all right away, my second batch got a little burned and stuck to the pan because I forgot to spray it. These were more of a snacky type thing for us but I did enjoy them for lunch one day.

Anonymous said...

Chicken breasts with pesto butter gets a 5 from the Marley's.

Anonymous said...

Ham and cheese potato dinner gets a 5 from the Marley's! This was easy to make slightly deceptive, in that I added some pumpkin and flax seed meal. No one was any the wiser.

Amy said...

Ritz chicken got a 5 from the Whillocks. Loved the saltiness of the crackers mixed in there. Also, Kari mentioned she made a sandwich with it for her daughter. I thought this was a great idea and so that will be our leftover meal tonight. :-) Yummy!!

Anonymous said...

Buttermilk pancakes gets a 5 from the Marley's.

The Italian sub stoup (a stewish soup) that we'll be exchanging next week gets a 5 from the Marley's. I made an extra batch for us, so we had some tonight. I'll be including on the recipe ways that you can increase the volume of the stoup (if you need to) and to make it deceptively delicious.

Anonymous said...

The Italian Chicken with Angel Hair pasta gets a 5 from us!! Yeah..YUM-O!!

The Ritz Chicken will get a 5 from this family. I did give away the exchange helping to a family that was in need a meal one night.. But we have made this recipe a few times and we love it.. I agree with Amy the saltiness adds a nice touch.

Can't wait for the next round and for the soups.. The phillies that I am making are from Rachel Ray that I modfied for freezer use.. I was saying YUM-O while making these... Hope they taste as good as they smell.

Anonymous said...

The Pepperoni Pasta gets a 5 YUM-O from the Bethkes.. the boys even ate the mushrooms which they never do!! It was a little spicy for them but they just drank more milk. They loved the flavor... I really loved it!! High Five!!

Amy said...

We have been loving what we are eating lately:
Big 5s go to:
Easy Potato Soup
Dana's Pork Chops
Chicken with Pesto Butter
Italian Sub Stoup
Yummy stuff!!

Anonymous said...

Philly cheesesteak sloppy joes and pepperoni pasta both get a 5 from the Marley's. Yummy!!

Anonymous said...

The Bethkes give a 5 to the Chicken and Wild Rice Soup!! Yum-O

Ok, We have yet to eat the Stoup but the croutons are gone.. we loved them!!! Kari-Can you share how they were made. We loved the buttery flavor and we ate them plain or in salad with other dishes but now we want to make some more!! Yummy Yummy!!

sarah s. said...

Ham & Potato casserole gets a 4 (Brian doesn't like scalloped potatoes or anything like it, but said they were good and had a more cheesy taste)

Italian Sub Stoup 4.5-ours had a lot of liquid and not a ton of meat, I enjoyed the liquid because it soaked into the croutons nicely, Brian will not combine bread of any kind with soup so he had a lot of extra broth.

Chicken Wild Rice Soup 4- I really liked it, Matthew wouldn't touch it and Brian said it was alright but the disclaimer is that he doesn't like wild rice soup of any kind but again thought this was better. He even said it was probably the best wild rice type soup he's ever had because the wild rice wasn't as dominant of flavor. He even took some leftovers for work so that says something.

Anonymous said...

Bethke's are giving the Italian Stoup a 4.75...ok this totally was yummy from all BUT it was just a bit salty so we only knocked down a notch just for the sodium. This for the flax tip as Mommy added some to the stoup!! The croutons get a 5.... can they be considered a meal on their own.. seems like they were in our family and we had to make another batch for the stoup.

Moroacan Chicken gets 4 from the family.. Although I love the flavor the kids are never super keen on the seasonings.. Even when I have made it in the past but I love to cut it up and put it in a lettuce salad and also wraps!! YUM-O

Next up Chili and Easy Potato Soup.

Jesse

Anonymous said...

Ooh, I love Jesse's comment on using the Moroccan chicken in a wrap. I need to keep that in mind when I serve that meal. Anyway, the potato soup and the chicken wild rice soup each get a 5 from the Marley's. I made cornbread with the wild rice soup and it was a delicious combo. I loved the sausage or whatever the meat was in the potato soup. YUM-O!!!!!! My two youngest kids aren't too keen on soups yet, but this is very good exposure for them. We need to do more soups next winter!!

sarah s. said...

Philly Cheese Steak Sloppy Joe's get a 3.

The Pepperoni Pasta gets a 3.5 but I did not mix the sauce and noodles together on the first round since Matthew is really unpredictable when it comes to combining noodles with anything. I liked that it was SUPER easy to make, both in preparation and reheating.

Anonymous said...

The chili, once again, gets a 5 from the Marley's. This was very easy to make deceptively delicious, as I added about 1 1/4 cups of pureed cauliflower and about 1/4 cup of flax seed meal. In doing that, I did add one more can of tomato sauce to thin it back to its original state. No one knew any better, and it was all eaten up!! Yeah!!!

Anonymous said...

Chili gets a 5 from the Bethke's YUM... Even my middle child who hates chili because the only thing he likes crumbled beef in is tacos.. and he gobbled it up!!! He really liked it!! That says something right there!!

Kari's pork steaks were super flavorful and yummy!!! We loved it.

We also had the ham n potato dinner and I put flax seed meal and pureed cauliflower in it and they didnt even know It was gone.. and we wanted more... So here goes a BIG 5!!

Tomm. Night is the easy potato soup before Scouts... I ll be making cornbread to go along as Kari had dine.. we'll see how it goes.!!

You girls are doing a great job!!!
Kudos to all and their hard work!!

Anonymous said...

Whoever brought the Moroccan chicken into the swap is a genius!!! Jesse's comment to eat them in a wrap was genius!! Elsie and Max each ate 2 wraps!!! I had 2 wraps!! (Kyla and Jerry haven't had dinner yet, but I know they will love this one) YUMMY!!! Guess what--we give the Moroccan chicken a 5. This will be great on a salad tomorrow for lunch. I can't wait.

I was just trying to get myself organized so I made a little spreadsheet of the meals so I can track which I've rated and which I haven't. I should do it right away but I forget. Anyway, we gave 5's to those listed below that I have missed.
Stuffed Chicken Cutlets
Beef Chimichangas
Freezer Meatballs
Moroccan Chicken
Chicken Wild Rice Soup
Philly Cheese Steak Sloppy Joes

Thanks!!

Pizza burgers from the supper swap saved the day. I had a house full of kids (nieces and a nephew were visiting), and I didn't have anything prepared for lunch. In my frantic rush to figure something out for a meal, I remembered I had a ton of pizza burgers in the freezer!!!! Yeah, supper swap!!!! You saved my butt!!!! Anyway, my picky eaters loved the burgers. A huge 5 for the pizza burgers!!!

The Supper Club Chicken was very good. We are giving this a 4 based on the saltyness. We definetly would have given it a 5 as it was gobbled up and we were scrapping for more.. But the saltyness was an issue amongst 4 of us in the fam. I am not sure what the recipe is.. but if additional salt is required I would back away from that addition on this recipe.

I would love to see this one repeated.

Jesse

Anonymous said...

OK, I just saw that the recipe has no additional salt but does anyone have a suggestion for mellowing out the salt on this one. Or are we the only family that thought it was really salty??

Anonymous said...

ok, after I posted the last comment my dear husband called and he had taken the leftovers to work ( yes, I know its Lent but he is at work for 15 hours today and he was in a rush to get out the door...so he gets a pass) and he said that when the rice and the chicken mixture were combined it had mellowed out the high salt flavor. Which made it very enjoyable. Just a tip..maybe instad of it just being placed on top if it were mixed in when served.. I know some kiddos and adults have a mixing phobia....LOL Just a tip to try.

The chicken enchiladas get a 4.75 (brylan didnt dig them) from us. Lots of flavor. They were great..even with the canned enchilada sauce!!
Next up Monte Cristos:)

Broiled roll-ups--YUMM-O!!!!! HUGE 5 from the Marley's. We need to make these again!

Roll-Ups get a 5 from this family for flavor! We did notice when ours were cooked that they shrunk quite a bit???? But the flavor was very good.

Anonymous said...

The Monte Cristos gets a 4 from us. They were good... I am sure that they required work to make and out together but they did not have the JAZZ and Oooos and Ahhhs that alot of our other dishes did.
The kids enjoyed them though!

Anonymous said...

The Monte Cristos had raving OOOHHs and AAAAHHHs from the Marley's. We gave the sandwiches a 5+++++++++++. Max had three halves, Kyla requested these sandwiches be put on the all time favorite list, I would have eaten more if I hadn't gotten full, and Jerry had never had french toast in such a manner (Elsie and Oliver have bad colds, so their appetites are pretty much non-existent). Even with my ravenous family, we still have 2 whole sandwiches in the freezer. We served the sandwiches with strawberry jam, and Kyla was the only one to not like them with the jam. Thanks, supper swap!!!!

It took us a while, but we finally got to the supper club chicken. We give it a 4.5, but only because I think I made it at an awkward time. Anyway, I added broccoli and pureed carrots to it, and it was really good!!

Ritz chicken gets a 5 from the Marley's! I added some sliced mushrooms and pureed cauliflower to the chicken mix, and it turned out great! I am just wondering if we could possibly reduce the butter content in the cracker topping a bit? I did make it on my own in the past and used less butter than the recipe called for, and it turned out fine. However, I can't remember how much butter I used.

Anonymous said...

Ritz Chicken...again gets a 5 from our family!! I love this recipe.. I think the recipe was like a stick of butter if I remember correctly... I eould think the butter could be toned down a notch...we like to add some extra godies to ours and once we do it mellows out the butter as well... YUM-O again!!

Seeing as how this is the month of favorites, it shouldn't be a surprise that we are rating the french toast sticks and tater tot casserole with a 5 each. You would have thought that I put candy on the table when we had the french toast sticks. Oliver even ate some of those!

Whillocks recent ratings:
Catalina Chicken- 5- Even served it to visitors who absolutely loved it!
Chicken Quesadillas- 5- loved it! Leftovers were great on salad too!
Chicken Pasta Swirls-5 also. I didn't "swirl" the noodles just dumped them and it worked out great. We loved it!! Even Mitchell ate it which is a rare occasion. I usually don't even count his ratings. :-)
Bacon Wrapped Chicken- I will give a 4 because of the kids. I think it was the filling but adults loved it and I would definetely have it again.

The Marley's have 2 new favorites: the chicken quesidillas and the bacon wrapped chicken. WOW!!! We give both of these meals a 5!!! I added pureed zucchini and pumpkin to the quesidilla mix, and no one was any the wiser. We ate the extra filling on blue corn tortilla chips, which was very good.

Italian hot beef gets a 5 from the Marley's. Max had 2 sandwiches tonight--he really liked it!

Pasta swirls with chicken turned out great! The Marley's give it a 5! I was a bit scared at seeing the huge chunks of veggies, so I pulled them out of the bag. I steamed them in the microwave, pureed them, and added them to the sauce. I put a bit of the sauce over the chicken mixture, topped the chicken with the noodles (I didn't swirl them, I was too lazy), and topped the noodles with the remaining creamy veggie sauce. It turned out great, and the kids ate their veggies!

Taco pasta shells get a huge 5 from the Marley's. We loved every last bite!

Egg and sausage bake gets a 5 from the Marley's. We would definitely LOVE to see this one again. I added about 1 1/2 cups of pureed cauliflower/butternut squash to the bake, and the puree ended up being the exact color as the egg mixture. No one knew, and it baked and set just fine.

Egg & Sausage Bake gets a 5 from the Bethke's. I honestly did not get to taste this I set this up for the boys and dad & grandpa, when grandma and I went garage saleing at 630 in the morning until 2 in the afternoon. And between the 5 of them they ate the whole things.. YEP thats a 5!!!

Love it!!

Since we swapped today I better get a few old ratings out of the way. So...Whilllocks say- taco Pasta Shells and Egg Bake were both 5+. We served them when my parents visited and everyone loved them! The italian hot beef was also great and a definite 5. Its very versatile...sandwich, wrap, on a salad, etc.

Anonymous said...

mmmm.....Ritz chicken is a 5 from the Marley's. I added 3/4 cup of pureed cauliflower, and about a cup of pureed carrots. Everyone thought it was cheese because of the orange color, which means that no one could taste the veggies--not even me!!

Thai noodles with pesto chicken was totally awesome!! It had such good flavor! However, the kids were not too enthused with the noodles (my fault for not exposing them to this type of noodle too much in the past), but Jerry and I loved it! So, overall, I would rate it with a 4.5.
-Kari

Jesse said...

Thai Pesto gets a 5+ from the Bethke's. The kids love this dish!! I also use this as a grill marinade... or even a side dipping sauce for the chicken.. if not wanting to make it into a salad! Kari- You could try this with Angel hair pasta... this kids might like it better or even Soba noodles. Just a thought.

4.5 from the bethke's for the Crispy Garlic Chicken! Yum-O!!

Little League Burgers get a 5 from the Whillocks again. We love this dinner! I did add some pureed carrot (thanks to Laura!! :-)) and Charlie thought it was even better.

Bethke's give 5 to the Brown Sugar meatloaf!! Yummy and it was just as good the next day!! Way to go!!

Jesse said...

The BBQ ham steaks get a 5 from the Bethke's... although this just barely fed the family... all of us shared portions of it and we all gave it a big thumbs up! Easy recipe and we'll me making it again!

***Please note for the Thai Pesto Chicken IF you have not made it yet** The noodles that were supplied with the meal are not the best for this recipe.. I just made another recipe of this with THOSE noodles... they are not what they are traditionally advertised to be!! I am disappointed by this! We do not have a true asian store here that I can go to get the right noodles... or the correctly advertised noodles. These noodles should be very light and thin and as was posted before the noodles you all received and are heavy and chewy- which would be better for a stir fry meal. This recipe is AWESOME made with the right noodles.. Now I am in search if the specific brand and name for this!! STay Tuned.. in the mean time if you make this I would make it with American Vermicelli or even with orzo pasta.. that way the noodles themselves would be soft and and light. I do apologize for this! The Asian Vermicelli is NOT suppose to be of this consistence and I am disappointed by this local purchase. ** Let me know if you want me to look for the right noodles and replace them for you if you have not made it.
**If you liked this recipe--flavor**- Don't give up on this recipe ..try it again once I locate the right noodles or make it and place on the grill or other noodles!! The flavor is what should be judged .... Happy Cooking and Eating!!

All American Burgers get a 5 for flavor from the BETHKE'S... they were yummy but for grilling I give these a 3... it was horrible for grilling or I did something wrong... after thawing I squeezed as much water out of the burgers as I could, some stayed to gether on the grill and some did not. SO in the end... Some were sort of burgers and some were sloppy joes. BUT the burger flavor themselves were excellent!!

Amy said...

I agree with Jesse on the All American Burgers. 5 for flavor but they didn't stay together when we grilled them either. Taste was great! Also Grilled Sesame Chicken also gets a 5. Yummy!

Jesse said...

If anyone has suggestions for the All American Burger, it owould be great to hear.. AS they were very yummy but just was suprised at the lack of sticky together, as the grandmas burgers faired perfect on the grill and they were frozen and thawed...:)

Anonymous said...

I haven't made my All American Burgers yet, but I just looked at the recipe, and perhaps adding 2-3 eggs to the uncooked ground beef before you form it into patties will help hold things together. I've added eggs to my burgers for years, and it seems to help. I also think that oatmeal will help hold things together, too.

Re: The All American Burgers

They are a very moist burger. Probably part of why they are so good. We have made them so many times that Todd is probably used to grilling them this way. The recipe does say to refrigerate the patties. Thaw in the fridge and keep cold until placed on the grill. Maybe even put them on when they are still partly frozen. One other thought is that when we had them for swap the patties were very thick. She made only 6 patties with 2 lbs of beef so they were 1/3 lb each. Ours were really good. I hope this helps!

By the way, they already have eggs in them.

So, I had to defrost my freezer because beer bottles and freezers don't mix. So, in the process of defrosting, I realized that I had 8 swaps that needed to be eaten. Then, Jerry told me that our friends from Decorah were coming to dinner on Tuesday night. To make things easy, I pulled out the sticky drunk pig on a stick and the all-american burgers and peach soup. Talk about an easy dinner preparation for 12 people!!! And, all three meals got huge rave reviews from us and from our friends! We will definitely be making all of those again. I can't believe how good the burgers were. I used 2 spatulas to gingerly flip the burgers on the grill, and it worked very well. All burgers remained intact. Therefore, the burgers, drunk pig, and peach soup all get 5s from the Marley's (and Mitchell's from Decorah).

4 Bs grilled chops gets a 5 from the Marley's. We loved it, it was huge and had great flavor! The martini marinated flank steak had awesome flavor. I was totally craving a beverage while I was grilling those steaks. However, I'm giving it a 4 because the portion was too small for our family.

Anonymous said...

Montreal chicken gets a 4.5 from the Marley's. Jerry and I loved it, but I scraped some of the topping off for the kids. It was just a bit to peppery for them.

Jesse said...

I agree with Kari, that costwise the portions with the Martini Steak were small for a big family. Even with the savings from Amanda. But we took ours and sliced it up and made fajitas out of them.. which stretched the meal. We are going to try this on pork steak and chicken as well. I love the flavor as does the family. But if you want to stretch the Supper Swap meal, try the fajitas or it will be a special treat for the hubby and yourself.. We did that one night as well.

Chicken ala King gets a 5 from the Marley's. Actually, Elsie gave it a 20. ALL of my kids ate this meal, so I'm sold. We ate it over toast with peas on the side and mixed in with the chicken. YUM-O! THANK YOU SUPPER SWAP!!!!!

ITALIAN HOT BEEF - 5 !!
Comments: The grown-ups loved it. The 4 yr old didn't care for it, BUT he doesn't like any meat other than chicken and hamburger, so he doesn't count.

TACO CASSEROLE: 5
Comments: Really good taste and the entire family ate it, including 1 and 4 yr olds. I think next time, I might put less chips in though. It seemed a little chip-heavy to me.

CHICKEN A LA KING: 3
Comments: It just didn't do much for us. The texture seemed a little mealy and we didn't think it was salty enough. We added salt and pepper and that helped for sure. We had it over egg noodles and didn't really care for it. I think serving it over biscuits might be good *and* adding a chicken boullion cube. The 4 yr old spit it out and that is unusual since he generally loves chickeny-casserole-y things.

The Marley's rate the pepperoni pasta milano with a huge 5! My family ate like champions. I added about a cup of pureed garbanzo beans and a cup of pureed squash to the mix, and in doing so, I also added some left over spaghetti sauce. Everyone loved it.

We also rate the Italian hot beef with a huge 5. That stuff is so good!

And thank you, Tina, for the chip suggestion on the taco casserole. I will keep that in mind when I prepare that dish.

Peach Soup - our family gave that a 0. Just was not for us at all.

I realize this one is a bit late, but the beef chimichangas get a 5 from the Marley's. Absolutely no leftovers with this one! I do want to suggest lowering the butter quantity on this recipe. I made the recipe last night with about 1/2 a stick of butter, not the full 2 as was suggested. I brushed the butter on the tortillas with a pastry brush, thus making it easier to use less.
-Kari

Amy Repinski said...

Chicken Hotdish- This one was on top of the cooler so I left it out yesterday and threw the rest in the freezer. My soon-to-be 2 year old couldn't get enough of this.....Repinski's give it a 5.

Tina said...

I'm behind with my ratings!!

Beef Chimichangas: 5
Very tasty! But I agree with Kari - no need for that much butter on the tortillas! I used only 1 stick and that seemed like too much. Brushing the butter on with a pastry brush is a GREAT idea! Thanks, Kari.

Spicy Chicken Stir Fry: 4
I served this to the workers for Antiquities on Saturday night since my son has a peanut allergy and can't eat it. I did save out a serving for my hubby to take for lunch at work. I personally didn't have any, but everyone said it tasted good but wasn't very spicy.

Ritz Chicken: 5+
The entire family LOVED this.

GHOULash: 4
I added brown sugar per Kari's suggestion and liked the added sweetness. Everyone liked it but it wasn't extraordinary.

Beef Stroganoff: 5
Nice and creamy. It was a hit, but there wasn't enough sauce for all the noodles, I didn't think. Can be stretched by adding some Half & Half.

Hot Ham & Cheese Sandwiches: 4
Tasty, but I must be inept because I could not get the top off the frozen sandwiches to heat them as suggested on the instructions! Therefore, the middle was frozen and the outside was very toasted. So then I had to microwave them... Just wasn't easy for me to actually get them on the table!

Cream Cheese Chicken: 5
Rich sauce! I served it over white rice and the rice seemed a little bland. I think this would go GREAT over Uncle Ben's Long Grain & Wild Rice blend! That would add some savory-ness (not a word, I know!).

OK, all caught up! I can't wait to eat more of these. I LOVE the Supper Swap! Thanks, gals!

Hot ham and cheese sammies get a HUGE 5 from the Marley's. I, too, couldn't open the sammies before putting them in the oven, so I just defrosted them in the microwave for a few minutes until I could separate the halves. This allowed for evenly toasted, delicious sammies.

Poppy beef gets raving reviews from the Marley's (a 5). Elsie gave it a 5 before she even tasted it (a habit of hers), Oliver ate it with smiles on his face, Jerry even said it was good, and Max, even while sick, rated it with a 5. I did add a heaping cup of squash puree to the cheese mixture, and no one was any the wiser. I do apologize for making so many of the dishes deceptive, but I can't help it. It's a problem I will always have.

Sweet & Sour Barbecued Chicken: 4
It was okay. I just cooked it on the stove; I think it would have been yummier grilled.

Old-Time Beef Stew: 4
I added some beef bouillon to make it a little saltier, plus I added some more veggies per Kari's suggestion (corn and green beans). I served it to company and we all thought it was good, but it's not my favorite soup/stew.

Poppy Beef: 3
Just not a hit at the Smeby house. This dish definitely has to sit for awhile (like lasagna) to firm up.

Hot Ham & Cheese Sandwiches: 4.5 (revised rating)
Nuked 'em first to separate the tops, then baked them. Much better this time around.

Tina said...

Chicken Tetrazzini: 4.5
I jazzed this one up a bit with a packet of no-sodium chicken bouillon and I mixed in some shredded mozzarella cheese as well as covered the top with mozzarella and the packet of cheese that came with it. I also used vermicelli instead of linguini. We adults liked it a lot - reminded us of tuna noodle casserole, except with chicken!

Laura - GREAT idea to divide it into two bags. One bag & half a box of pasta made what I consider a "normal-sized" casserole (appx. 6-8 servings). Now we still have another meal in the freezer!

Tina Smeby said...

Mardy's Meatballs: 5 points
Yummy! Made them with the large PC scoop as suggested. Tasted very good.

Old time beef stew gets a big 5 from the Marley's. We gobbled it up! I did remove about 1 1/2 cups of broth and to it added about 2/3 cup flour, mixed well, and poured it back into the crock pot, where it then simmered for the last half hour of cooking. This made a nice thick stew. Yumm-O!!

Chicken Hotdish: 5. My family really love casseroles!

Thai Pesto Chicken: 5. This rating is based on me alone. I LOVE pesto. The kids ate a few chicken chunks (the green color turned them off) and my hubby didn't care for it because he has always disliked pesto in general. But as far as a pesto meal goes, it was very good.

Ultimate Steakhouse Burgers: 5! Great taste!! The entire family loved them!

Pizza Dunkers: 5. Thanks, Kari, for the extra directions on how to defrost them. I used my PC stone and it worked great; however, pepperoni & Canadian bacon grease ran all over the bottom of the oven when I baked them! I wasn't expecting that! So, everyone may want to use a pan/stone with a lip on it to contain the grease.

Beef stroganoff is one of our absolute favorites. Tina, you knocked this one out of the ballpark! We give this one a huge 5. If you cook the noodles al dente, drain, then mix with the meat and let it set for about 15 minutes, the noodles will absorb some of the liquid, and it will be fabulous. We also give high marks (5) to Lydia's circle chicken. We would love to see that one again. The chicken quesedillas were also delicious, and we give those a fabulous 5.

We devoured this one, and there was even some for lunch the next day. We also give this one a 5. The chicken fajita casserole is a rare dish that the we are going to rate with a 3. Something was missing from this dish, and I'm just not quite sure what it was.
